Grilled Veggies Sub

Well most of the time, I like to have a salad, but today I decided to make a sandwich full of grilled veggies. The following was made for 3 individuals.


1 large zucchini
1 large yellow squash, sliced
2 large portabello steaks, whole
1 large red bellpepper, sliced
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp pepper
1 tsp salt
submarine bread
goat cheese, sliced
indoor grill (if you don't want to grill outside)

Pesto Mayo:
3 tbsp mayonnaise
2 tbsp ready made pesto

Prepare the veggies and have them ready for the marinade. Mix the olive oil, balsamic vinegar, salt and pepper. This will act as the marinade. In a bowl mix the veggies with the marinade. Preheat your grill and have this ready before you start to cook your veggies. Start to cook the vegetables and flip after 2 minutes. You want to have good grill marks, avoiding it from getting too overcooked. Once cooked, take to the oven covering them in foil (place at 175 to keep warm).



Next, prepare the bread and toast it. Spread with the pesto mayo. Add some slices of goat cheese on one slice of bread. Then, add the vegetables to the other slice. I have used grilled onions as well. There are so many ways of making great veggies subs. I had it with some kettle BBQ chips. So many possibilities!!
