MC helps with some Bruschetta

With this blog, I can never accomplish all of my recipes without MC's help. We always trade ideas when working with some of the various types of food that I create in the kitchen. Sometimes though, MC does bring along great ideas when creating good food. This is one of those really good appetizers that I strongly encourage you try. We ended up making this for a good friend's bridal shower. You are more than welcome to try it!

Ingredients:

9 roma tomatoes
1 large red onion
5 bunches of basil
3 tbsp olive oil
1 tbsp minced garlic
1 6 oz container of prepared pesto 
2 packages fresh mozzerella

Start by dicing up the tomatoes. You need to only use the outer tomato (not the inner pulp).


Dice up the onion and place into the diced tomato.


Julienne the basil and add it to the mixture.


Add the balsamic vinegar and olive oil. Add garlic, salt and pepper to taste. Mix well. Taste the mixture and if you find that you need to add additional salt, pepper, olive oil or balsamic vinegar then add it. Place this container in the refrigerator and allow it to meld overnight.

 


You can make your own pesto, but for speeding the process we bought some ready made pesto. Spread the pesto on the slice of each bread. Place a slice of mozzarella and sprinkle the mixture atop each slice. Again, do this the day of the event/party you may be planning.
